Are Pancakes Healthy?
These ones are! Bananas are a good source of potassium, vitamin B6 and essential amino acid tryptophan; oats contain selenium, silica, vitamin B1 and 17 different amino acids; chia seeds are high in manganese, phosphorus, copper, selenium, iron, magnesium, and calcium. Plus the added benefits and nutrients of your chosen plant milk and toppings. There is so much to love about this plant based recipe.
How to Make Vegan Pancakes
INGREDIENTS
3 bananas
2 cup oats
3/4 cup almond or plant-based milk of choice (plus extra if needed to thin the mixture)
3 tablespoon chia seeds
1 tablespoon maple syrup to sweeten
Coconut oil to cook
METHOD
Combine bananas, oats, chia seeds and plant-milk in a blender and mix until it reaches a batter like or thick smoothie consistency. You can add maple syrup if you’d like to sweeten the mixture, or enjoy it just with the sweetness of the banana.
If the mixture is too thick to pour, then add gradually some extra milk and blend as needed.
Heat 1 teaspoon coconut oil in a pan on medium heat and pour mixture in to pancake shapes of desired size.
Cook 2-3 minutes or until light brown on both sides.
Serve with any toppings you like, we love maple syrup, berries and a generous dollop of coconut yogurt!
